- Onion - 1 small, diced
- Bell pepper (any color) - 1/2, diced
- Tomato - 1 medium, diced
- Corn (fresh or frozen) - 1/2 cup
- Green peas (fresh or frozen) - 1/2 cup
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Rinse the long-grain rice under cold water until the water runs clear; drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced bell pepper and tomato to the saucepan, cooking for another 3-4 minutes until softened.
- Stir in the rinsed rice and cook for 2 minutes, allowing the rice to toast slightly.
- Add the vegetable broth, corn, green peas, cumin, paprika, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro before serving.
