  • Onion - 1 small, diced
  • Bell pepper (any color) - 1/2, diced
  • Tomato - 1 medium, diced
  • Corn (fresh or frozen) - 1/2 cup
  • Green peas (fresh or frozen) - 1/2 cup
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear; drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced bell pepper and tomato to the saucepan, cooking for another 3-4 minutes until softened.
  4. Stir in the rinsed rice and cook for 2 minutes, allowing the rice to toast slightly.
  5. Add the vegetable broth, corn, green peas, cumin, paprika, salt, and black pepper to the saucepan. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro before serving.
