Ingredients

  • 1/4 cup red onion, finely chopped
  • 1 lime, juiced
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • Sliced radishes for garnish (optional)

Steps

  1. Cut the avocados in half and remove the pit. Scoop out a bit of the flesh to create more space for the filling, and set aside.
  2. In a mixing bowl, combine the black beans, corn, red bell pepper, red onion, lime juice, cumin, paprika, salt, and pepper. Mix well until all ingredients are evenly coated.
  3. Gently fold in the chopped cilantro into the bean mixture.
