Ingredients

  • Dried hibiscus flowers - 50 grams
  • Water - 1 liter
  • Chia seeds - 30 grams
  • Greek yogurt - 200 grams
  • Honey or agave syrup - 2 tablespoons (30 ml)
  • Lime juice - 2 tablespoons (30 ml)
  • Mint leaves - for garnish

Steps

  1. In a saucepan, bring 1 liter of water to a boil and add 50 grams of dried hibiscus flowers.
  2. Boil for about 10 minutes, then remove from heat and let it steep for an additional 10 minutes.
  3. Strain the mixture into a pitcher, discarding the hibiscus flowers, and allow it to cool to room temperature.
  4. In a small bowl, soak 30 grams of chia seeds in 1 cup (240 ml) of water for about 10 minutes until they expand and form a gel-like consistency.
  5. Once the hibiscus water is cooled, add 2 tablespoons of honey or agave syrup and 2 tablespoons of lime juice, stirring well to combine.
  6. To serve, divide the chia seed mixture between two glasses, pour the hibiscus drink over the chia seeds, and top each glass with 100 grams of Greek yogurt.
  7. Garnish with fresh mint leaves and enjoy your refreshing brunch drink!
