Ingredients
- Dried hibiscus flowers - 50 grams
- Water - 1 liter
- Chia seeds - 30 grams
- Greek yogurt - 200 grams
- Honey or agave syrup - 2 tablespoons (30 ml)
- Lime juice - 2 tablespoons (30 ml)
- Mint leaves - for garnish
Steps
- In a saucepan, bring 1 liter of water to a boil and add 50 grams of dried hibiscus flowers.
- Boil for about 10 minutes, then remove from heat and let it steep for an additional 10 minutes.
- Strain the mixture into a pitcher, discarding the hibiscus flowers, and allow it to cool to room temperature.
- In a small bowl, soak 30 grams of chia seeds in 1 cup (240 ml) of water for about 10 minutes until they expand and form a gel-like consistency.
- Once the hibiscus water is cooled, add 2 tablespoons of honey or agave syrup and 2 tablespoons of lime juice, stirring well to combine.
- To serve, divide the chia seed mixture between two glasses, pour the hibiscus drink over the chia seeds, and top each glass with 100 grams of Greek yogurt.
- Garnish with fresh mint leaves and enjoy your refreshing brunch drink!
