Ingredients

  • 2 medium zucchini - 400 grams
  • 2 tablespoons olive oil - 30 ml
  • 2 cloves garlic - minced
  • 1/2 teaspoon ground cumin - 1.5 grams
  • 1/2 teaspoon ground coriander - 1.5 grams
  • 1/4 teaspoon paprika - 0.5 grams
  • Salt - to taste
  • Black pepper - to taste
  • 1/4 cup cherry tomatoes - halved - 40 grams
  • 1/4 cup fresh parsley - chopped - 15 grams
  • 1 tablespoon lemon juice - 15 ml

Steps

  1. Using a spiralizer or vegetable peeler, create zucchini noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Stir in the ground cumin, ground coriander, and paprika, cooking for an additional minute.
  5. Add the zucchini noodles to the skillet, tossing to coat them in the spice mixture.
  6. Cook for 3-5 minutes, stirring occasionally, until the noodles are tender but still slightly crisp.
  7. Season with salt and black pepper to taste, then add the halved cherry tomatoes and cook for another 2 minutes.
  8. Remove from heat and stir in the chopped parsley and lemon juice before serving.
