Ingredients
- 2 medium zucchini - 400 grams
- 2 tablespoons olive oil - 30 ml
- 2 cloves garlic - minced
- 1/2 teaspoon ground cumin - 1.5 grams
- 1/2 teaspoon ground coriander - 1.5 grams
- 1/4 teaspoon paprika - 0.5 grams
- Salt - to taste
- Black pepper - to taste
- 1/4 cup cherry tomatoes - halved - 40 grams
- 1/4 cup fresh parsley - chopped - 15 grams
- 1 tablespoon lemon juice - 15 ml
Steps
- Using a spiralizer or vegetable peeler, create zucchini noodles and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the ground cumin, ground coriander, and paprika, cooking for an additional minute.
- Add the zucchini noodles to the skillet, tossing to coat them in the spice mixture.
- Cook for 3-5 minutes, stirring occasionally, until the noodles are tender but still slightly crisp.
- Season with salt and black pepper to taste, then add the halved cherry tomatoes and cook for another 2 minutes.
- Remove from heat and stir in the chopped parsley and lemon juice before serving.
