Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Green onion - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying
  • Lemon - 1, juiced

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
  2. In a mixing bowl, combine the grated zucchini, chickpea flour, parsley, green onion, garlic, cumin, salt, and black pepper.
  3. Mix the ingredients until well combined, ensuring the chickpea flour coats the zucchini evenly.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Scoop about 2 tablespoons of the zucchini mixture and form it into a patty, then place it in the skillet. Repeat with remaining mixture, ensuring not to overcrowd the pan.
  6. Cook the fritters for about 3-4 minutes on each side until golden brown and crispy. Add more oil as needed for frying.
  7. Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.
  8. Serve warm, drizzled with fresh lemon juice.
