Ingredients
- Zucchini - 300 grams
- Chickpea flour - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Green onion - 2, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
- Lemon - 1, juiced
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
- In a mixing bowl, combine the grated zucchini, chickpea flour, parsley, green onion, garlic, cumin, salt, and black pepper.
- Mix the ingredients until well combined, ensuring the chickpea flour coats the zucchini evenly.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture and form it into a patty, then place it in the skillet. Repeat with remaining mixture, ensuring not to overcrowd the pan.
- Cook the fritters for about 3-4 minutes on each side until golden brown and crispy. Add more oil as needed for frying.
- Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.
- Serve warm, drizzled with fresh lemon juice.
