Ingredients

  • Zucchini - 400 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Fresh mint leaves - 15 grams, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Yogurt (optional) - 2 tablespoons for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until softened and translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped zucchini to the saucepan and sauté for another 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat and let it simmer for about 15 minutes, or until the zucchini is tender.
  7. Remove from heat and stir in the chopped mint, salt, black pepper, and lemon juice.
  8. Using an immersion blender or a regular blender, puree the soup until smooth.
  9. Serve hot, garnished with a dollop of yogurt and a few mint leaves if desired.
