Ingredients

  • Chickpeas - 200 grams (cooked and drained)
  • Red bell pepper - 1 medium, finely chopped
  • Carrot - 1 medium, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Zaatar spice mix - 2 tablespoons
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon (for frying)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Tahini sauce - 2 tablespoons (for serving)

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the finely chopped red bell pepper, grated carrot, chopped onion, minced garlic, zaatar, breadcrumbs, egg, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Shape the mixture into two equal-sized patties, about 1.5 cm thick.
  4. Heat olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by slicing them in half and toasting them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, tomato slices, cucumber slices, and a drizzle of tahini sauce. Top with the other half of the bun.
