Ingredients
- Chickpeas - 200 grams (cooked and drained)
- Red bell pepper - 1 medium, finely chopped
- Carrot - 1 medium, grated
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Zaatar spice mix - 2 tablespoons
- Breadcrumbs - 50 grams
- Egg - 1 large
- Olive oil - 1 tablespoon (for frying)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Tahini sauce - 2 tablespoons (for serving)
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the finely chopped red bell pepper, grated carrot, chopped onion, minced garlic, zaatar, breadcrumbs, egg, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Shape the mixture into two equal-sized patties, about 1.5 cm thick.
- Heat olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by slicing them in half and toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, tomato slices, cucumber slices, and a drizzle of tahini sauce. Top with the other half of the bun.
