Ingredients

  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Canned chickpeas - 240 grams, drained and rinsed
  • Vegetable broth - 500 milliliters
  • Tomato paste - 1 tablespoon
  • Zaatar - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until softened.
  2. Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Sauté for another 5-7 minutes until the vegetables are tender.
  3. Stir in the chickpeas, vegetable broth, tomato paste, zaatar, lemon juice, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
  5. Taste and adjust the seasoning if necessary. Remove from heat.
  6. Serve hot, garnished with fresh parsley.
