- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Canned chickpeas - 240 grams, drained and rinsed
- Vegetable broth - 500 milliliters
- Tomato paste - 1 tablespoon
- Zaatar - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until softened.
- Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in the chickpeas, vegetable broth, tomato paste, zaatar, lemon juice, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
- Taste and adjust the seasoning if necessary. Remove from heat.
- Serve hot, garnished with fresh parsley.
