- Cherry Tomatoes - 150 grams, halved
- Olive Oil - 2 tablespoons
- Zaatar Spice Blend - 2 tablespoons
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Fresh Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the sliced carrots, zucchini, bell pepper, red onion, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with zaatar, salt, and black pepper. Toss well to ensure all vegetables are coated.
