  • Bell Pepper - 100 grams, diced
  • Red Onion - 100 grams, sliced
  • Cherry Tomatoes - 150 grams, halved
  • Olive Oil - 2 tablespoons
  • Zaatar Spice Blend - 2 tablespoons
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Fresh Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced carrots, zucchini, bell pepper, red onion, and cherry tomatoes.
  3. Drizzle the olive oil over the vegetables and sprinkle with zaatar, salt, and black pepper. Toss well to ensure all vegetables are coated.
  4. Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper.
