Ingredients

  • Cauliflower - 1 medium head (about 500g)
  • Olive oil - 2 tablespoons
  • Zaatar spice blend - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the cauliflower and remove the leaves and stem, then cut it into bite-sized florets.
  3. In a large bowl, mix the olive oil, zaatar, garlic powder, salt, and black pepper.
  4. Add the cauliflower florets to the bowl and toss them well to coat evenly with the zaatar mixture.
  5. Spread the seasoned cauliflower florets on a baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and golden brown, tossing halfway through for even cooking.
  7. Once done, remove from the oven and drizzle with lemon juice.
  8. Garnish with fresh chopped parsley before serving.
