Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Zaatar spice mix - 2 tablespoons
  • Olive oil (for drizzling) - 2 tablespoons
  • Tomato (sliced) - 1 medium
  • Red onion (thinly sliced) - 1/2 medium
  • Bell pepper (sliced) - 1/2 medium
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 20 minutes or until doubled in size.
  5. Preheat your oven to 220°C (425°F).
  6. Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness (around 1/2 cm).
  7. Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  8. In a small bowl, mix the zaatar spice with 2 tablespoons of olive oil to create a paste. Spread this mixture evenly over the dough.
  9. Arrange the sliced tomatoes, red onion, and bell pepper on top of the zaatar spread.
  10. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  11. Remove from the oven and sprinkle with fresh parsley before slicing and serving.
