Ingredients

  • Portobello mushrooms - 4 large
  • Olive oil - 3 tablespoons
  • Zaatar spice mix - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a bowl, mix the olive oil, zaatar spice mix, minced garlic, lemon juice, salt, and black pepper to create a marinade.
  3. Clean the portobello mushrooms with a damp cloth and remove the stems.
  4. Place the mushrooms in the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
  5. Once the grill is hot, place the marinated mushrooms gill-side down on the grill.
  6. Grill the mushrooms for about 5-7 minutes, then flip them over and grill for another 5-7 minutes until they are tender and have nice grill marks.
  7. Remove the mushrooms from the grill and garnish with chopped fresh parsley before serving.
