Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Olive oil - 30 ml
  • Zaatar spice blend - 30 grams
  • Olive oil for zaatar mixture - 30 ml
  • Sesame seeds - 2 tablespoons

Steps

  1. In a mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In another bowl, mix the all-purpose flour and salt. Once the yeast is activated, add it to the flour mixture along with 30 ml of olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Cover the bowl with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
  4. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  5. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flat round shape, about 1 cm thick.
  6. In a small bowl, mix the zaatar spice blend with 30 ml of olive oil until well combined.
  7. Place the rolled dough on the prepared baking sheet. Spread the zaatar mixture evenly on top, and sprinkle with sesame seeds.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  9. Remove from the oven, let cool slightly, and serve warm.
