- Powdered sugar - 30 grams
- Unsalted butter - 50 grams, softened
- Water - 30 ml
- Zaatar spice mix - 2 tablespoons
- Olive oil - 1 tablespoon
- Pine nuts - 20 grams, toasted (optional)
- Salt - a pinch
Steps
- In a mixing bowl, combine almond flour, tapioca flour, powdered sugar, and a pinch of salt.
- Add the softened butter and mix until the texture resembles coarse crumbs.
- Gradually add water to the mixture, kneading gently until a smooth dough forms. Cover and let it rest for 15 minutes.
- In a separate bowl, mix zaatar spice, olive oil, and toasted pine nuts (if using) to create the filling.

- Divide the dough into small balls, about the size of a walnut.
- Flatten each ball in the palm of your hand and place a teaspoon of the zaatar filling in the center.
- Fold the dough over the filling and shape it into a ball again, ensuring the filling is completely enclosed.
- Place the filled balls on a lined baking tray and slightly flatten them with your palm.
- Bake in the preheated oven for 20-25 minutes or until the bottoms are lightly golden.
- Allow to cool slightly before serving. Enjoy your Zaatar Maamoul warm or at room temperature.
