- Almond flour - 120 grams
- Psyllium husk - 15 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 180 ml
- Olive oil - 2 tablespoons
- Zaatar spice mix - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 220°C (428°F).
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt, mixing well.
- Add water and 1 tablespoon of olive oil to the dry ingredients, and stir until a dough forms.
- Knead the dough for a couple of minutes until it becomes smooth and pliable.
- Divide the dough into two equal portions and roll each into a flat, round shape, about 1/2 cm thick.
- Transfer the flatbreads to a baking sheet lined with parchment paper.
- In a small bowl, mix the zaatar spice with the remaining tablespoon of olive oil to create a paste.
- Spread the zaatar mixture evenly over each flatbread.
- Top each flatbread with halved cherry tomatoes and crumbled feta cheese.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
- Remove from the oven, sprinkle with fresh parsley, and serve warm.
