Ingredients

  • Almond flour - 120 grams
  • Psyllium husk - 15 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 180 ml
  • Olive oil - 2 tablespoons
  • Zaatar spice mix - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt, mixing well.
  3. Add water and 1 tablespoon of olive oil to the dry ingredients, and stir until a dough forms.
  4. Knead the dough for a couple of minutes until it becomes smooth and pliable.
  5. Divide the dough into two equal portions and roll each into a flat, round shape, about 1/2 cm thick.
  6. Transfer the flatbreads to a baking sheet lined with parchment paper.
  7. In a small bowl, mix the zaatar spice with the remaining tablespoon of olive oil to create a paste.
  8. Spread the zaatar mixture evenly over each flatbread.
  9. Top each flatbread with halved cherry tomatoes and crumbled feta cheese.
  10. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
  11. Remove from the oven, sprinkle with fresh parsley, and serve warm.
