Ingredients
- Zucchini - 200 grams
- Eggplant - 200 grams
- Red bell pepper - 100 grams
- Cherry tomatoes - 150 grams
- Olive oil - 3 tablespoons
- Zaatar spice blend - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Wash and chop the zucchini, eggplant, and red bell pepper into bite-sized pieces.
- In a large bowl, combine the chopped vegetables, cherry tomatoes, olive oil, zaatar spice blend, minced garlic, salt, and black pepper. Toss well to coat the vegetables evenly.
- Spread the vegetable mixture on a baking tray lined with parchment paper.
- Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
- Remove from the oven and drizzle with fresh lemon juice.
- Serve hot, garnished with fresh parsley.
