Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Fresh parsley - 30 grams, finely chopped
  • Fresh cilantro - 30 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Zaatar spice mix - 2 tablespoons
  • Whole wheat flour - 50 grams
  • Olive oil - 2 tablespoons, plus extra for frying
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the chopped parsley, cilantro, minced garlic, chopped red onion, zaatar spice mix, whole wheat flour, olive oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two equal-sized burger patties, about 1.5 cm thick.
  4. Heat a non-stick skillet over medium heat and add a splash of olive oil. Once hot, carefully place the patties in the skillet.
  5. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  6. While the patties are cooking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add a bit of water to reach your desired consistency.
  7. Toast the burger buns lightly in the skillet or in a toaster.
  8. Assemble the burgers by placing a chickpea patty on each bun, topped with slices of tomato and cucumber, and drizzled with tahini sauce.
  9. Serve immediately with a side salad or your favorite dipping sauce.
