Zaatar Chickpea Burger

Ingredients
- Canned chickpeas - 400 grams, drained and rinsed
- Fresh parsley - 30 grams, finely chopped
- Fresh cilantro - 30 grams, finely chopped
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Zaatar spice mix - 2 tablespoons
- Whole wheat flour - 50 grams
- Olive oil - 2 tablespoons, plus extra for frying
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2 pieces
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the chopped parsley, cilantro, minced garlic, chopped red onion, zaatar spice mix, whole wheat flour, olive oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two equal-sized burger patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a splash of olive oil. Once hot, carefully place the patties in the skillet.
- Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- While the patties are cooking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add a bit of water to reach your desired consistency.
- Toast the burger buns lightly in the skillet or in a toaster.
- Assemble the burgers by placing a chickpea patty on each bun, topped with slices of tomato and cucumber, and drizzled with tahini sauce.
- Serve immediately with a side salad or your favorite dipping sauce.
