Ingredients

  • Chicken breast - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, diced
  • Chicken broth - 500 ml
  • Water - 250 ml
  • Zaatar spice mix - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrot, diced celery, and diced potato. Cook for another 3-4 minutes until the vegetables start to soften.
  3. Add the diced chicken breast to the pot and cook until lightly browned, about 5 minutes.
  4. Pour in the chicken broth and water. Bring to a boil, then reduce the heat to a simmer.
  5. Stir in the zaatar spice mix, salt, and black pepper. Cover and let it simmer for 15 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Remove from heat and stir in the fresh parsley and lemon juice. Adjust the seasoning if necessary.
  7. Serve hot, garnished with additional parsley if desired.
