- Chicken thighs - 400 grams
- Zaatar spice blend - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Bell pepper - 1 medium, sliced
- Red onion - 1 medium, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the zaatar spice blend, olive oil, minced garlic, lemon juice, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them thoroughly with the spice mixture. Let them marinate for at least 15 minutes.
- In a baking dish, arrange the marinated chicken thighs skin-side up.
- Surround the chicken with halved cherry tomatoes, sliced bell pepper, and sliced red onion.
- Drizzle any remaining marinade over the vegetables.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and has a nice golden brown color.
