Ingredients

  • Chicken thighs - 400 grams
  • Zaatar spice blend - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Bell pepper - 1 medium, sliced
  • Red onion - 1 medium, sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the zaatar spice blend, olive oil, minced garlic, lemon juice, salt, and black pepper.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the spice mixture. Let them marinate for at least 15 minutes.
  4. In a baking dish, arrange the marinated chicken thighs skin-side up.
  5. Surround the chicken with halved cherry tomatoes, sliced bell pepper, and sliced red onion.
  6. Drizzle any remaining marinade over the vegetables.
  7. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and has a nice golden brown color.
