Ingredients
- Cauliflower - 300 grams (1 small head)
- Olive oil - 2 tablespoons
- Zaatar spice blend - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Remove the leaves and stem from the cauliflower, and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the riced cauliflower to the skillet and cook for about 5 minutes, stirring occasionally until slightly tender.
- Stir in the zaatar spice blend, salt, and black pepper. Continue to cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat and drizzle with lemon juice. Mix well.
- Serve warm, garnished with fresh parsley.
