Ingredients

  • Cauliflower - 300 grams (1 small head)
  • Olive oil - 2 tablespoons
  • Zaatar spice blend - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Remove the leaves and stem from the cauliflower, and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
  3. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the riced cauliflower to the skillet and cook for about 5 minutes, stirring occasionally until slightly tender.
  5. Stir in the zaatar spice blend, salt, and black pepper. Continue to cook for another 2-3 minutes, allowing the flavors to meld.
  6. Remove from heat and drizzle with lemon juice. Mix well.
  7. Serve warm, garnished with fresh parsley.
