Ingredients

  • Chickpeas - 200 grams (cooked)
  • Oats - 50 grams (rolled)
  • Zaatar spice - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons
  • Burger buns - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1 medium (sliced)
  • Cucumber - 1/2 medium (sliced)

Steps

  1. In a food processor, combine the cooked chickpeas, oats, zaatar, minced garlic, chopped onion, olive oil, salt, black pepper, and lemon juice. Blend until the mixture is well combined but still chunky.
  2. Form the mixture into 2 burger patties and place them on a plate.
  3. Heat a non-stick skillet over medium heat. Cook the patties for about 5 minutes on each side, or until they are golden brown and crispy.
  4. While the patties are cooking, prepare the tahini sauce by mixing tahini and water in a small bowl until smooth. Adjust consistency with more water if needed.
  5. Once the patties are cooked, assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a burger patty, sliced tomato, and cucumber.
  6. Drizzle the tahini sauce over the top, then close the burger with the top half of the bun. Serve immediately.
