Ingredients

  • Almond flour - 150 grams
  • Tapioca flour - 50 grams
  • Xanthan gum - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Water - 120 milliliters
  • Olive oil - 2 tablespoons
  • Za'atar spice blend - 3 tablespoons
  • Sesame seeds - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large mixing bowl, combine the almond flour, tapioca flour, xanthan gum, salt, and baking powder until well mixed.
  2. Gradually add the water and olive oil to the dry ingredients, mixing until a dough forms. If the dough is too sticky, add a bit more almond flour.
  3. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  4. Divide the dough into two equal portions and place each on the prepared baking sheet. Using your hands, flatten each portion into a round or oval shape, about 1/2 cm thick.
  5. In a small bowl, mix the za'atar spice blend with a drizzle of olive oil to form a paste. Spread the za'atar mixture evenly over each flatbread.
  6. Sprinkle sesame seeds on top of the flatbreads.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and crispy.
  8. Remove from the oven and let cool slightly. Garnish with chopped parsley before serving.
