Ingredients

  • King oyster mushrooms - 250 grams
  • Rice flour - 50 grams
  • Cornstarch - 25 grams
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 100 ml (for frying)
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Clean the king oyster mushrooms and slice them into shrimp-like shapes, about 1 cm thick.
  2. In a bowl, mix the rice flour, cornstarch, garlic powder, paprika, cumin, salt, and black pepper to create the coating.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Dredge each mushroom slice in the flour mixture, ensuring they are well-coated.
  5. Fry the coated mushroom slices in the hot oil for about 3-4 minutes on each side or until golden brown and crispy.
  6. Remove the fried mushrooms from the pan and drain on paper towels to remove excess oil.
  7. In a small bowl, mix tahini, lemon juice, and water to create a smooth dipping sauce, adjusting the water for desired consistency.
  8. Serve the Vegetarian Shrimp hot, garnished with chopped parsley, along with the tahini sauce on the side.
