Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 1 tablespoon
  • Red onion - 1 small, thinly sliced
  • Bell pepper - 1 medium, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Cherry tomatoes - 150 grams, halved
  • Cooked chickpeas - 100 grams
  • Shawarma spice blend - 1 tablespoon
  • Mozzarella cheese - 150 grams, shredded
  • Tahini - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  4. Brush the dough lightly with olive oil.
  5. In a mixing bowl, combine the sliced red onion, bell pepper, zucchini, cherry tomatoes, cooked chickpeas, shawarma spice blend, salt, and pepper. Toss well to coat the vegetables evenly with the spices.
  6. Spread the vegetable mixture evenly over the pizza dough.
  7. Sprinkle the shredded mozzarella cheese on top of the vegetables.
  8. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  9. While the pizza is baking, prepare the tahini sauce by whisking together tahini, minced garlic, lemon juice, and a pinch of salt in a small bowl. If too thick, add a little water to reach desired consistency.
  10. Once the pizza is done, remove it from the oven and drizzle the tahini sauce over the top.
  11. Garnish with chopped fresh parsley before slicing and serving.
