Ingredients
- Pizza dough - 250 grams
- Olive oil - 1 tablespoon
- Red onion - 1 small, thinly sliced
- Bell pepper - 1 medium, thinly sliced
- Zucchini - 1 small, thinly sliced
- Cherry tomatoes - 150 grams, halved
- Cooked chickpeas - 100 grams
- Shawarma spice blend - 1 tablespoon
- Mozzarella cheese - 150 grams, shredded
- Tahini - 2 tablespoons
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Brush the dough lightly with olive oil.
- In a mixing bowl, combine the sliced red onion, bell pepper, zucchini, cherry tomatoes, cooked chickpeas, shawarma spice blend, salt, and pepper. Toss well to coat the vegetables evenly with the spices.
- Spread the vegetable mixture evenly over the pizza dough.
- Sprinkle the shredded mozzarella cheese on top of the vegetables.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
- While the pizza is baking, prepare the tahini sauce by whisking together tahini, minced garlic, lemon juice, and a pinch of salt in a small bowl. If too thick, add a little water to reach desired consistency.
- Once the pizza is done, remove it from the oven and drizzle the tahini sauce over the top.
- Garnish with chopped fresh parsley before slicing and serving.
