- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Zaatar spice mix - 3 tablespoons
- Labneh (or Greek yogurt) - 100 grams
- Tomato - 1 medium, sliced
- Bell pepper - 1 small, thinly sliced
- Black olives - 50 grams, pitted and sliced
- Fresh parsley - a handful, chopped
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F) and prepare a baking sheet lined with parchment paper.
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 25 cm in diameter.
- Spread 50 grams of labneh over each dough circle, leaving a small border around the edges.
- In a small bowl, mix zaatar with a tablespoon of olive oil to create a paste. Spread this mixture evenly over the labneh.
- Top with sliced tomatoes, bell peppers, black olives, and sprinkle with chopped parsley.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and crispy.
- Remove from the oven and let cool slightly before slicing. Serve warm.
