Vegetarian Kibbeh Burger

Ingredients
- Bulgur wheat - 100g
- Water - 250ml
- Chickpeas (cooked) - 100g
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 30g, chopped
- Mint - 15g, chopped
- Cumin - 1 tsp
- Allspice - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 2 tbsp
- Pita bread - 2 pieces
- Tahini - 2 tbsp
- Lemon juice - 1 tbsp
- Cucumber - 1 small, sliced
- Tomato - 1 medium, sliced
Steps
- In a medium saucepan, bring 250ml of water to a boil. Add the bulgur wheat, remove from heat, cover, and let sit for 15 minutes until the water is absorbed.
- In a food processor, combine the cooked chickpeas, red onion, garlic, parsley, mint, cumin, allspice, salt, and black pepper. Pulse until a coarse mixture forms.
- Once the bulgur has cooled slightly, add it to the chickpea mixture in the food processor and pulse again until combined. Form the mixture into 2 patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, mix tahini and lemon juice in a small bowl. Add a little water to thin it if necessary.
- To serve, warm the pita bread in the skillet for 1 minute on each side. Place a kibbeh patty in each pita, top with cucumber and tomato slices, and drizzle with tahini sauce.
