Ingredients

  • Red bell pepper - 1 medium, cut into 1-inch squares

  • Zucchini - 1 medium, sliced into 1-inch rounds
  • Red onion - 1 medium, cut into wedges
  • Cherry tomatoes - 10, whole
  • Firm tofu - 200 grams, cubed
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Prepare the skewers by soaking wooden ones in water for 30 minutes to prevent burning.
  2. In a bowl, combine olive oil, garlic powder, ground cumin, paprika, salt, black pepper, and lemon juice to create a marinade.
  3. Add the cubed tofu and vegetables (bell peppers, zucchini, red onion, and cherry tomatoes) into the marinade, tossing to coat evenly. Let it marinate for at least 15 minutes.
  4. Preheat the grill or a grill pan over medium heat.
  5. Thread the marinated vegetables and tofu onto the skewers, alternating between the different ingredients.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove from the grill and let cool for a minute. Garnish with chopped fresh parsley before serving.
