- Zucchini - 1 medium, diced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Eggplant - 1 small, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomato - 1 medium, chopped
- Chickpeas - 200 grams, canned, drained and rinsed
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large saucepan over medium heat.
- Add chopped onions and minced garlic, sauté until onions are translucent.
- Stir in the diced zucchini, carrot, bell pepper, and eggplant, cooking for about 5 minutes until they start to soften.
- Add the chopped tomato, chickpeas, cumin, cinnamon, paprika, salt, and pepper, and mix well.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover and let it cook for about 25 minutes, stirring occasionally, until the vegetables are tender.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
