Ingredients

  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Eggplant - 1 small, diced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, chopped
  • Chickpeas - 200 grams, canned, drained and rinsed
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add chopped onions and minced garlic, sauté until onions are translucent.
  3. Stir in the diced zucchini, carrot, bell pepper, and eggplant, cooking for about 5 minutes until they start to soften.
  4. Add the chopped tomato, chickpeas, cumin, cinnamon, paprika, salt, and pepper, and mix well.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Cover and let it cook for about 25 minutes, stirring occasionally, until the vegetables are tender.
  7. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.
