  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Cherry tomatoes - 200 grams
  • Button mushrooms - 200 grams
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Sumac - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Preheat the grill or barbecue to medium-high heat.
  2. Wash and chop the bell peppers, zucchini, and red onion into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables, cherry tomatoes, and button mushrooms.
  4. In a small bowl, mix together the garlic powder, ground cumin, sumac, olive oil, salt, black pepper, and lemon juice to create a marinade.
