  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic cloves - 2, minced
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons
  • Fresh parsley - for garnish

Steps

  1. In a large bowl, combine sliced zucchini, red bell pepper, yellow bell pepper, red onion, and mushrooms.
  2. In a small bowl, whisk together olive oil, ground cumin, ground coriander, paprika, salt, black pepper, and minced garlic.
  3. Pour the marinade over the vegetables and toss until well-coated. Let it marinate for at least 10 minutes.
