Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Zaatar spice mix - 10 grams
- Tomato - 1 medium, diced
- Bell pepper - 1 small, diced
- Spinach - 50 grams, chopped
- Red onion - 1 small, thinly sliced
- Feta cheese - 50 grams, crumbled
- Lemon juice - 5 ml
- Black pepper - to taste
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a lightly floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 25 cm in diameter.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- In a bowl, mix the diced tomato, bell pepper, chopped spinach, red onion, feta cheese, lemon juice, and black pepper.
- Spread the vegetable mixture evenly over the dough circles and sprinkle with zaatar spice mix.
- Bake in the preheated oven for about 15-20 minutes or until the edges are golden brown.
- Remove from the oven and let cool slightly before slicing. Serve warm.
