Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Zaatar spice mix - 10 grams
  • Tomato - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Spinach - 50 grams, chopped
  • Red onion - 1 small, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 5 ml
  • Black pepper - to taste

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 25 cm in diameter.
  7. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  8. In a bowl, mix the diced tomato, bell pepper, chopped spinach, red onion, feta cheese, lemon juice, and black pepper.
  9. Spread the vegetable mixture evenly over the dough circles and sprinkle with zaatar spice mix.
  10. Bake in the preheated oven for about 15-20 minutes or until the edges are golden brown.
  11. Remove from the oven and let cool slightly before slicing. Serve warm.
