- Zucchini - 100 grams, grated

- Garlic - 2 cloves, minced
- Chickpea flour - 60 grams
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- In a large bowl, combine grated zucchini, carrot, potato, chopped onion, minced garlic, and chopped parsley.
- Add chickpea flour, cumin powder, coriander powder, paprika, salt, and black pepper to the vegetable mixture. Mix well until all ingredients are combined.
- Form the mixture into oval-shaped kofta and thread them onto the soaked wooden skewers.
- Preheat a grill or barbecue to medium-high heat and brush the skewers with olive oil.
- Grill the kofta for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through.
- Serve hot with tahini sauce, pita bread, and a side salad.
