Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Potato - 100 grams, grated
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpea flour - 60 grams
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a large bowl, combine grated zucchini, carrot, potato, chopped onion, minced garlic, and chopped parsley.
  2. Add chickpea flour, cumin powder, coriander powder, paprika, salt, and black pepper to the vegetable mixture. Mix well until all ingredients are combined.
  3. Form the mixture into oval-shaped kofta and thread them onto the soaked wooden skewers.
  4. Preheat a grill or barbecue to medium-high heat and brush the skewers with olive oil.
  5. Grill the kofta for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through.
  6. Serve hot with tahini sauce, pita bread, and a side salad.
