Ingredients

  • Romaine lettuce - 100 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Radishes - 50 grams, thinly sliced
  • Bell pepper (any color) - 50 grams, diced
  • Green onion - 2 stalks, chopped
  • Fresh parsley - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Pita bread - 1 medium, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Spread the pita bread triangles on a baking sheet and drizzle with 1 tablespoon of olive oil, tossing to coat. Bake for 10 minutes or until golden and crispy.
  3. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, radishes, bell pepper, green onion, parsley, and mint.
  4. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad mixture and toss gently to combine.
  6. Once the pita bread is ready, remove it from the oven and let it cool slightly, then add it to the salad just before serving for maximum crunch.
