- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Canned chickpeas - 400 grams, drained and rinsed
- Vegetable broth - 500 milliliters
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced carrot, celery, and bell pepper. Sauté for 5 minutes until they begin to soften.
- Add the diced zucchini and tomato, cooking for another 3-4 minutes while stirring occasionally.
- Add the drained chickpeas to the pot along with the vegetable broth, cumin, coriander, paprika, salt, and black pepper. Bring to a boil.
- Reduce heat and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.
- Stir in the chopped parsley and lemon juice just before serving.
- Serve hot, garnished with additional parsley if desired.
