Ingredients

  • Olive oil - 1 tablespoon

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Canned chickpeas - 400 grams, drained and rinsed
  • Vegetable broth - 500 milliliters
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced carrot, celery, and bell pepper. Sauté for 5 minutes until they begin to soften.
  4. Add the diced zucchini and tomato, cooking for another 3-4 minutes while stirring occasionally.
  5. Add the drained chickpeas to the pot along with the vegetable broth, cumin, coriander, paprika, salt, and black pepper. Bring to a boil.
  6. Reduce heat and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.
  7. Stir in the chopped parsley and lemon juice just before serving.
  8. Serve hot, garnished with additional parsley if desired.
