  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 pieces
  • Red cabbage (shredded) - 100g
  • Avocado (sliced) - 1 medium
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons
  • Salt (for tahini sauce) - to taste

Steps

  1. Drain and rinse the canned jackfruit, then use your hands or a fork to shred it into bite-sized pieces.
  2. In a bowl, mix the shredded jackfruit with olive oil, garlic powder, smoked paprika, cumin, salt, and black pepper. Let it marinate for 15 minutes.
  3. While the jackfruit is marinating, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt until smooth. Adjust the consistency with more water if needed.
  4. In a skillet over medium heat, add the marinated jackfruit and cook for 10-12 minutes, stirring occasionally, until it is heated through and slightly crispy.
  5. Warm the corn tortillas in a separate skillet or microwave for 10-15 seconds until pliable.
  6. Assemble the tacos by placing a portion of the cooked jackfruit on each tortilla, then top with shredded red cabbage, avocado slices, and chopped cilantro.
