Ingredients
- Zucchini - 100 grams
- Bell pepper (red or yellow) - 100 grams
- Red onion - 50 grams
- Chickpeas (canned, drained) - 200 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 20 grams
- Tomato - 1 medium
- Cucumber - 1 small
Steps
- Preheat the grill or a grill pan over medium-high heat.
- Chop the zucchini, bell pepper, and red onion into bite-sized pieces.
- In a large bowl, combine the chickpeas, chopped vegetables, olive oil, garlic powder, ground cumin, smoked paprika, ground coriander, salt, and black pepper. Mix well to coat all ingredients evenly.
- Spread the mixture onto the grill or grill pan in a single layer. Grill for about 10-12 minutes, turning occasionally, until the vegetables are tender and lightly charred.
- While the vegetables are grilling, prepare the tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl. Add a little water to reach your desired consistency.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- Warm the pita bread on the grill for about 1-2 minutes on each side.
- To assemble, spread a generous amount of tahini sauce on each pita, then add the grilled vegetables and chickpeas.
- Top with diced tomato, cucumber, and chopped fresh parsley.
- Roll up the pita and serve immediately.
