Ingredients
- Green lentils - 100 grams
- Basmati rice - 100 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 large, thinly sliced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Seaweed flakes (nori or dulse) - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the green lentils under cold water and soak them for 15 minutes. Drain and set aside.
- In a pot, combine the soaked lentils with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until tender but not mushy.
- In a separate pot, rinse the basmati rice and add it to 200 ml of boiling water. Cook for about 15 minutes or until the water is absorbed and the rice is fluffy. Set aside.
- In a large pan, heat the olive oil over medium heat. Add the sliced onion and sauté until golden brown, about 10 minutes.
- Add the minced garlic and diced carrot to the pan, cooking for an additional 5 minutes until softened.
- Stir in the cooked lentils, rice, seaweed flakes, smoked paprika, cumin, salt, and black pepper. Mix well to combine all the flavors.
- Drizzle with lemon juice and stir again. Cook for another 2-3 minutes to heat through.
- Serve warm, garnished with fresh parsley.
