Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced tomato, carrot, bell pepper, and zucchini to the pot. Cook for an additional 5-7 minutes until the vegetables soften.
  4. Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for 2 minutes until fragrant.
  5. Add the soaked and drained rice to the pot, stirring well to combine with the vegetables and spices.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  7. Remove the pot from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley.
  8. Serve warm, garnished with lemon wedges.
