- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced tomato, carrot, bell pepper, and zucchini to the pot. Cook for an additional 5-7 minutes until the vegetables soften.
- Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for 2 minutes until fragrant.
- Add the soaked and drained rice to the pot, stirring well to combine with the vegetables and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Remove the pot from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley.
- Serve warm, garnished with lemon wedges.
