Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 3 tablespoons
  • Water - 2 tablespoons
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into thick slices resembling fish fillets.
  3. In a bowl, mix olive oil, lemon juice, minced garlic, cumin, coriander, smoked paprika, salt, and black pepper.
  4. Brush the cauliflower slices generously with the marinade and let them sit for 10 minutes.
  5. Place the marinated cauliflower slices on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20 minutes, flipping halfway through, until golden and tender.
  7. While the cauliflower is roasting, prepare the tahini sauce by mixing tahini, water, and a pinch of salt in a small bowl until smooth.
  8. Once the cauliflower is done, remove it from the oven and let it cool slightly.
  9. Serve the roasted cauliflower topped with tahini sauce, sprinkled with chopped parsley and toasted pine nuts.
