- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 3 tablespoons
- Water - 2 tablespoons
- Pine nuts - 2 tablespoons, toasted
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into thick slices resembling fish fillets.
- In a bowl, mix olive oil, lemon juice, minced garlic, cumin, coriander, smoked paprika, salt, and black pepper.
- Brush the cauliflower slices generously with the marinade and let them sit for 10 minutes.
- Place the marinated cauliflower slices on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20 minutes, flipping halfway through, until golden and tender.
- While the cauliflower is roasting, prepare the tahini sauce by mixing tahini, water, and a pinch of salt in a small bowl until smooth.
- Once the cauliflower is done, remove it from the oven and let it cool slightly.
- Serve the roasted cauliflower topped with tahini sauce, sprinkled with chopped parsley and toasted pine nuts.
