  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Seaweed (nori or dulse) - 10 grams, crumbled
  • Vegetable broth - 400 ml
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, bell pepper, and zucchini to the pan, and cook for an additional 5-7 minutes until the vegetables are tender.
  4. Stir in the crumbled seaweed, ground cumin, ground coriander, paprika, salt, and black pepper, cooking for another 2 minutes until fragrant.
  5. Drain the soaked rice and add it to the pan, mixing well with the vegetables and spices.
  6. Pour in the vegetable broth and lemon juice, then bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pan, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
  9. Serve hot, garnished with fresh parsley.
