Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, bell pepper, and zucchini to the pan, and cook for an additional 5-7 minutes until the vegetables are tender.
- Stir in the crumbled seaweed, ground cumin, ground coriander, paprika, salt, and black pepper, cooking for another 2 minutes until fragrant.
- Drain the soaked rice and add it to the pan, mixing well with the vegetables and spices.
- Pour in the vegetable broth and lemon juice, then bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pan, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
- Serve hot, garnished with fresh parsley.
