Ingredients
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned tomatoes - 400 grams (or 4 medium fresh tomatoes, chopped)
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - 2 tablespoons, chopped (or 1 teaspoon dried basil)
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot, cooking for another 5 minutes until the vegetables are slightly softened.
- Stir in the canned tomatoes (or fresh tomatoes), vegetable broth, ground cumin, ground coriander, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, allowing the flavors to meld together.
- Once the soup has simmered, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the chopped fresh basil and lemon juice, adjusting the seasoning if necessary.
- Serve hot, garnished with fresh parsley.
