Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned tomatoes - 400 grams (or 4 medium fresh tomatoes, chopped)
  • Vegetable broth - 500 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - 2 tablespoons, chopped (or 1 teaspoon dried basil)
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
  2. Add the minced garlic, diced carrot, and diced celery to the pot, cooking for another 5 minutes until the vegetables are slightly softened.
  3. Stir in the canned tomatoes (or fresh tomatoes), vegetable broth, ground cumin, ground coriander, salt, and black pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, allowing the flavors to meld together.
  5. Once the soup has simmered, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the chopped fresh basil and lemon juice, adjusting the seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
