- White rice - 100 grams, rinsed
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped tomatoes, cumin, coriander, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to soften.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the rinsed rice, reduce the heat to low, and cover the pot. Simmer for 15-20 minutes, or until the rice is cooked and tender.
