Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Ripe tomatoes - 200 grams, sliced
- Kalamata olives - 50 grams, pitted and sliced
- Fresh basil - 10 grams, chopped
- Garlic - 1 clove, minced
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix the ingredients until a dough forms, then knead for about 10 minutes on a floured surface until smooth and elastic.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes, or until it has doubled in size.
- Preheat your oven to 220°C (428°F) and place a pizza stone or baking sheet inside to heat up.
- Once the dough has risen, punch it down and roll it out into a 25 cm (10 inch) circle on a floured surface.
- Transfer the rolled dough onto a piece of parchment paper. Spread the minced garlic evenly over the base.
- Arrange the sliced tomatoes on top of the dough and sprinkle the olives evenly over the tomatoes. Season with black pepper and add the chopped basil.
- If using feta cheese, crumble it over the top of the pizza.
- Carefully slide the pizza (on the parchment) onto the preheated pizza stone or baking sheet and bake for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, let it cool for a few minutes, slice, and serve warm.
