Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Ripe tomatoes - 200 grams, sliced
  • Kalamata olives - 50 grams, pitted and sliced
  • Fresh basil - 10 grams, chopped
  • Garlic - 1 clove, minced
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms, then knead for about 10 minutes on a floured surface until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes, or until it has doubled in size.
  5. Preheat your oven to 220°C (428°F) and place a pizza stone or baking sheet inside to heat up.
  6. Once the dough has risen, punch it down and roll it out into a 25 cm (10 inch) circle on a floured surface.
  7. Transfer the rolled dough onto a piece of parchment paper. Spread the minced garlic evenly over the base.
  8. Arrange the sliced tomatoes on top of the dough and sprinkle the olives evenly over the tomatoes. Season with black pepper and add the chopped basil.
  9. If using feta cheese, crumble it over the top of the pizza.
  10. Carefully slide the pizza (on the parchment) onto the preheated pizza stone or baking sheet and bake for 15-20 minutes, or until the crust is golden and crispy.
  11. Remove from the oven, let it cool for a few minutes, slice, and serve warm.
