Ingredients

  • Ripe tomatoes - 500 grams
  • Onion - 1 medium (about 150 grams)
  • Garlic - 3 cloves
  • Fresh basil leaves - 30 grams
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Wash and chop the ripe tomatoes into quarters.
  2. Dice the onion and mince the garlic cloves.
  3. In a medium pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Add the chopped tomatoes to the pot, stirring to combine with the onions and garlic. Cook for about 5 minutes, until the tomatoes start to break down.
  6. Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  7. Remove from heat and add the fresh basil leaves, reserving a few for garnish. Blend the soup using an immersion blender until smooth.
  8. Stir in the lemon juice and adjust seasoning if necessary.
  9. Serve hot, garnished with reserved basil leaves.
