Tomato and Basil Soup

Ingredients
- Ripe tomatoes - 500 grams
- Onion - 1 medium (about 150 grams)
- Garlic - 3 cloves
- Fresh basil leaves - 30 grams
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Wash and chop the ripe tomatoes into quarters.
- Dice the onion and mince the garlic cloves.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the chopped tomatoes to the pot, stirring to combine with the onions and garlic. Cook for about 5 minutes, until the tomatoes start to break down.
- Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Remove from heat and add the fresh basil leaves, reserving a few for garnish. Blend the soup using an immersion blender until smooth.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with reserved basil leaves.
