- Fresh parsley - 30 grams (chopped)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat bread crumbs - 50 grams
- Olive oil - 1 tablespoon (for frying)
- Tahini - 3 tablespoons
- Lemon juice - 2 tablespoons
- Water - 2 tablespoons (for tahini sauce)
- Pita bread or burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the chopped red onion, minced garlic, chopped parsley, cumin powder, coriander powder, salt, black pepper, and whole wheat bread crumbs to the mashed chickpeas. Mix well until combined.
- Form the mixture into 2 equal-sized patties.
- Heat a non-stick skillet over medium heat and add the olive oil. Once hot, cook the patties for about 4-5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, and water in a small bowl until smooth. Adjust water for desired consistency.
- Once the patties are cooked, assemble the burgers by placing each patty on a pita or burger bun. Top with lettuce, sliced tomato, and cucumber.
- Drizzle the tahini sauce generously over the assembled burgers and serve immediately.
