Tahini Burger

- Chickpeas - 240 grams (1 can, drained and rinsed)
- Tahini - 60 grams (4 tablespoons)
- Onion - 50 grams (1 small, finely chopped)
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour - 40 grams (1/3 cup, or as needed)
- Olive oil - 2 tablespoons (for frying)
- Whole wheat burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium (sliced)
- Cucumber - 1 small (sliced)
- Fresh parsley - a handful (chopped)
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add tahini, chopped onion, minced garlic, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Gradually add flour to the mixture until it holds together and can be shaped into patties. You may need more or less flour depending on the moisture of the chickpeas.
- Form the mixture into two equal-sized burger patties.
- Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl, adding water as needed to achieve a drizzle-able consistency.
- Toast the whole wheat burger buns, if desired.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by a chickpea patty, slices of tomato and cucumber, and a drizzle of tahini sauce.
- Top with chopped parsley and serve immediately.
