Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Tahini - 60 grams (4 tablespoons)
  • Onion - 50 grams (1 small, finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour - 40 grams (1/3 cup, or as needed)
  • Olive oil - 2 tablespoons (for frying)
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium (sliced)
  • Cucumber - 1 small (sliced)
  • Fresh parsley - a handful (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add tahini, chopped onion, minced garlic, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Gradually add flour to the mixture until it holds together and can be shaped into patties. You may need more or less flour depending on the moisture of the chickpeas.
  4. Form the mixture into two equal-sized burger patties.
  5. Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  6. While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl, adding water as needed to achieve a drizzle-able consistency.
  7. Toast the whole wheat burger buns, if desired.
  8. Assemble the burgers by placing a lettuce leaf on each bun, followed by a chickpea patty, slices of tomato and cucumber, and a drizzle of tahini sauce.
  9. Top with chopped parsley and serve immediately.
