  • Cucumber, diced - 1/2 medium (about 100g)
  • Lemon juice - 2 tablespoons (30ml)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Pine nuts, toasted - 2 tablespoons (about 15g)
  • Chickpeas, cooked - 1/2 cup (about 80g)

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a bowl, combine the chopped parsley, mint, diced tomatoes, and cucumber.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the vegetable mixture and toss until well combined.
  5. Spread the cooked chickpeas evenly over the pizza base.
  6. Top the pizza base with the tabbouleh mixture, spreading it out evenly.
  7. Sprinkle the toasted pine nuts over the top.
  8. Bake the pizza in the preheated oven for 10-12 minutes or until the edges are golden and crispy.
