Tabbouleh Burger

Ingredients
- Bulgur wheat - 50g
- Water - 150ml
- Fresh parsley - 40g, finely chopped
- Fresh mint - 20g, finely chopped
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1/4 medium, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100g, cooked and mashed
- Garlic - 1 clove, minced
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
Steps
- In a small pot, bring 150ml of water to a boil. Add 50g of bulgur wheat, cover, and remove from heat, letting it sit for about 15 minutes until the water is absorbed.
- In a mixing bowl, combine the cooked bulgur, chopped parsley, mint, diced tomato, diced cucumber, and chopped red onion.
- Drizzle 2 tablespoons of olive oil and 2 tablespoons of lemon juice over the mixture. Season with salt and black pepper, and stir until well combined.
- In a separate bowl, mix the mashed chickpeas with the minced garlic. Form the mixture into two patties.
- Heat a non-stick skillet over medium heat and cook the chickpea patties for about 4-5 minutes on each side until golden brown.
- Meanwhile, toast the pita bread in the skillet for a minute on each side until warm and slightly crispy.
- To assemble, place a chickpea patty on each pita, top with the tabbouleh mixture, and drizzle with tahini before folding the pita in half.
