Ingredients

  • Bulgur wheat - 50g
  • Water - 150ml
  • Fresh parsley - 40g, finely chopped
  • Fresh mint - 20g, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1/4 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100g, cooked and mashed
  • Garlic - 1 clove, minced
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons

Steps

  1. In a small pot, bring 150ml of water to a boil. Add 50g of bulgur wheat, cover, and remove from heat, letting it sit for about 15 minutes until the water is absorbed.
  2. In a mixing bowl, combine the cooked bulgur, chopped parsley, mint, diced tomato, diced cucumber, and chopped red onion.
  3. Drizzle 2 tablespoons of olive oil and 2 tablespoons of lemon juice over the mixture. Season with salt and black pepper, and stir until well combined.
  4. In a separate bowl, mix the mashed chickpeas with the minced garlic. Form the mixture into two patties.
  5. Heat a non-stick skillet over medium heat and cook the chickpea patties for about 4-5 minutes on each side until golden brown.
  6. Meanwhile, toast the pita bread in the skillet for a minute on each side until warm and slightly crispy.
  7. To assemble, place a chickpea patty on each pita, top with the tabbouleh mixture, and drizzle with tahini before folding the pita in half.
