- Chickpeas - 200 grams (cooked)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (chopped)
- Sumac - 1 tablespoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Oats - 50 grams (ground into flour)
- Olive oil - 2 tablespoons (for frying)
- Whole wheat burger buns - 2
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
- Add the chopped red onion, minced garlic, chopped parsley, sumac, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well.
- Gradually add the ground oats to the mixture until it holds together. You may need to adjust the consistency by adding more oats if it's too wet.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat the olive oil in a skillet over medium heat. Fry the patties for about 5-7 minutes on each side, or until golden brown and crispy.
- While the patties cook, prepare the tahini sauce by mixing tahini, lemon juice, and a little water to achieve a drizzle-able consistency.
- Toast the whole wheat burger buns lightly on a grill or in a toaster.
- Assemble the burgers by placing the chickpea patties on the buns and topping them with sliced tomatoes, cucumbers, and a drizzle of tahini sauce.
