Ingredients

  • Chickpeas - 200 grams (cooked)
  • Red onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 30 grams (chopped)
  • Sumac - 1 tablespoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Oats - 50 grams (ground into flour)
  • Olive oil - 2 tablespoons (for frying)
  • Whole wheat burger buns - 2
  • Tomato - 1 (sliced)
  • Cucumber - 1/2 (sliced)
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
  2. Add the chopped red onion, minced garlic, chopped parsley, sumac, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well.
  3. Gradually add the ground oats to the mixture until it holds together. You may need to adjust the consistency by adding more oats if it's too wet.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. Heat the olive oil in a skillet over medium heat. Fry the patties for about 5-7 minutes on each side, or until golden brown and crispy.
  6. While the patties cook, prepare the tahini sauce by mixing tahini, lemon juice, and a little water to achieve a drizzle-able consistency.
  7. Toast the whole wheat burger buns lightly on a grill or in a toaster.
  8. Assemble the burgers by placing the chickpea patties on the buns and topping them with sliced tomatoes, cucumbers, and a drizzle of tahini sauce.
