  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole wheat burger buns - 2
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Fresh parsley - 1/4 cup, chopped
  • Tahini - 2 tablespoons

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into burger-sized patties.
  2. In a bowl, mix olive oil, sumac, garlic powder, ground cumin, salt, black pepper, and lemon juice to create a marinade.
  3. Coat the tofu patties with the marinade and let them marinate for at least 10 minutes.
  4. Heat a non-stick skillet over medium heat and cook the marinated tofu patties for 4-5 minutes on each side, or until golden brown.
  5. While the tofu is cooking, prepare the fresh herb salad by mixing sliced tomato, cucumber, red onion, and chopped parsley in a bowl.
  6. Toast the burger buns in the skillet for 1-2 minutes until slightly crispy.
  7. Assemble the burgers by placing a tofu patty on each bun, topping with the fresh herb salad and a drizzle of tahini.
